Stir Fried Rice Stick Noodles

 Here's a great one-pot dish that comes together quickly and feeds a crowd.  I had a house full of hungry kids and I needed something to satisfy them fast.  I found a packet of rice stick noodles in my pantry and decided a quick noodle dish with some sausage and vegetables would be a nice lunch.  These noodles were a big hit with the kids (although my picky eater pulled out some of the veggies).  When my husband came home he requested the leftovers for dinner and really enjoyed them too.  If you have never worked with rice stick noodles I say give them a try. They cook up very easily in minutes and provide a wonderful option for gluten free meals.

Ingredients:
1 packet of rice stick noodles (10oz packet)  cooked
1lb of sausage or any lean ground meat
2-3 cups of shredded white cabbage
1 medium onion chopped
2 stalks of celery sliced
1 bunch of green onions/scallions chopped
2 cups of frozen veggie mix defrosted (peas, carrots, corn, green beans)
1 Tbs grated ginger
1 Tbs grated garlic
1/4 soy sauce (or to taste for salt in the dish)
2-3 Tbs ketchup
2 tsp vinegar
red chili flakes to taste

Note: You can scramble a couple of eggs and add at the end of cooking if you like. 

Directions:

Cook noodles per package instructions. Drain noodles. After draining the noodles I placed them on a baking sheet to cool down and stop the cooking process.  I also tossed them with a little bit of canola oil so they didn't stick

 


In the same pan that you cooked the noodles, brown the lean meat or sausage. Once meat starts to brown, add the ginger and garlic and cook for another minute.

Then add red chili flakes and all the vegetables. Cook vegetables until the cabbage becomes tender then add the ketchup, vinegar and soy sauce.
Allow all ingredients to cook down and taste for seasoning.  Finally add the cooked noodles and toss with the other ingredients. Mix well and serve. Enjoy.

Egg-cellent Honey Dijon Mustard Deviled Eggs

 Eggs are everywhere during the Easter Season. My kids love the colorful plastic eggs that are filled with treats and chocolates. My favorite kind of eggs are any egg I can eat... especially delicious deviled eggs.  When I made these deviled eggs, my kids were popping them in their mouths faster than I could fill them.  I still managed to save a few for my pictures thank goodness. Everyone thinks of mayonnaise when it comes to making the filling of deviled eggs... I think of mustard. I love the tang mustard gives and I complimented it with some honey. These eggs were irresistible and if you are an egg loving person like my family is you will think they are Egg-cellent!


Ingredients:
18 large eggs boiled (see boiling instructions below)
2 Tbs of light mayonnaise
1 Tbs of Dijon Mustard
2 tsp of American Yellow mustard
1 tsp honey
salt and pepper to taste
Garnish with paprika and minced green chilies

Directions:
Here are the best instructions I have seen for boiling eggs.  You will need a pan with a tight fitting lid.  Place eggs in a pan and fill with cold water.  Bring water and eggs to a rapid boil.  Then turn stove off and place a lid on top of the pan. Allow eggs to sit in the boiled water for 10 minutes. Drain away the hot water and replace with cold water and peel. 


 
After you peel all your eggs, cut them in half and separate the white from the yolk
Then add the ingredients to the egg yolks and mash well.  Fill the egg whites with the yolk filling and sprinkle with paprika and minced green chilies. Enjoy.

Sri Lankan Kiri Bath (Coconut Milk Rice)

Sri Lankan Kiri Bath (pronounced "kiree-buth", translates in English literally as "milk rice") is a traditional dish that is served and eaten during celebrations and auspicious occasions to mark and symbolize luck and happiness.  Most Sri Lankans start the first of every month (especially January 1st) with kiri bath for breakfast in hopes of starting the month and year off with good luck.  This beautiful rice dish is very simple and consists of four ingredients:  rice, water, coconut milk and salt. Although these ingredients are basic, it is truly a delicious, creamy, savory rice dish that can be eaten plain, with spicy dishes or sweet jaggery.   I was fortunate enough to receive a sample of traditional Heirloom Ceylon Red Rice from Rural Returns by Essential Living Foods.  This beautiful, highly nutritious red rice is produced by rural communities in Sri Lanka (formally known as Ceylon) through sustainable farming.


Ingredients:
2 cups rice (see note)
4-5 cups of water
2 cups of coconut milk (fresh, can)
salt to taste

Note: you can use any long grain white, brown or red rice for this dish.  If you use a firmer grain rice like brown or red rice I suggest you wash and soak the rice for 30 minutes to help the cooking process.

Directions:
Step 1: Wash the rice several times with water until the water runs clear from the rice. Soak rice if you desire to help your cooking time.
Step 2:  In a large pot on high heat add rice and 4-5 cups of water. Bring rice to a boil then reduce to a gentle simmer (medium-low heat) and allow to cook for 20-30 minutes until almost all the water is absorbed. Next add the coconut milk and the salt to taste. Mix all ingredients well and cook in at a low heat until the coconut milk is fully absorbed. The rice should be very tender and the consistency of the rice should be creamy (kind of like a firm rice pudding).

The rice is traditionally served on a platter and formed into a thick cake and cut into diamonds (see first picture for example). The rice will be firm enough to stick together and the pieces should be able to be served individually.  Although this rice is completely delicious on its own, it is traditionally served with chili/onion sambal called lunu miris pictured below or any of the dishes listed below.

Creamy Pasta Dinner

This creamy pasta dinner is one of my family's favorite weekly meals.  As much as I cook, even I have moments of panic about what to cook for dinner sometimes.   At those times, I turn to this creamy pasta dinner because it's quick, easy and I always have the ingredients on hand at home.  I also know there will be no objections from any of the adults, kids or picky eaters so it's a peaceful meal as well.  This dish is really a twist on the traditional spaghetti pasta with red meat sauce by adding cream cheese.  Once you try a little cream cheese in your spaghetti sauce, you may never go back.

Today I am pleased to say that I am guest posting for Sophie over at The German Foodie.  Sophie is a German expat living here in the US.  Although she has lived in the US for many years, she has not left her German roots behind because her blog is full of wonderful German dishes (especially the breads).  My goodness does this lady know how to bake some fabulous bread! I envy her baking skills and I can just imagine how good her house always smells with the wafting of fresh baked bread around. If you have not visited her wonderful blog, please do so because you will definitely learn a lot.  Sophie loves pasta dishes as well so I thought I would make her one of my family's favorite pasta dishes today... hope you enjoy.

Ingredients:
1lb of any style of pasta cooked to al dente.
1lb of favorite lean ground meat or sausage
large jar of tomato pasta sauce
3-4 cloves of garlic minced or grated
1 tsp dried basil
1 tsp dried parsley
1 tsp dried oregano
1-2 tsp of brown sugar (to taste)
1 onion diced
red pepper flakes to taste
salt and black pepper to taste
1 bell green bell pepper diced
3-4oz of cream cheese

Directions:
Brown your favorite lean ground meat with onions, bell pepper and seasoning. Then add jarred spaghetti sauce.  Finish off with 3-4 oz of cream cheese and allow to melt into the sauce and become creamy. Toss with pasta and serve. Enjoy.

Baked Sweet Potato Falafels & Yogurt Mint Sauce

Have you ever started to make a dish then ended up making something totally different? That's what happened when I came up with these Sweet Potato Falafels.  I started out by boiling some sweet potatoes to make mashed sweet potatoes. Then I changed my mind and started  frying onions and chilies and adding chickpea flour into the mix.  So I call these falafels since they do have chickpeas (flour) in them. I am glad I decided to bake them because they came out perfectly guilt-free.  We just ate them with the Yogurt Mint dipping sauce, but you can certainly treat them like traditional falafels and put them into pitas. 

Ingredients:
3-4 sweet potatoes boiled, peeled and mashed
1 egg
1 cup of chickpea flour (more if necessary)
1 medium onion chopped finely
2-3 green chilies chopped finely
red chili flakes to taste
salt to taste
1 tsp cumin seeds gently pounded into pieces  or ground cumin if you prefer
1 Tbs of grated ginger
1 Tbs of grated garlic
2 Tbs of fresh minced parsley or 1 Tbs of dried
black and white sesame seeds (optional)

Directions:
In a frying pan saute the onions, chilies, ginger, garlic, cumin, salt and red chili flakes for 3-4minutes.  Leave in pan to cool slightly.  Then mash the sweet potatoes, with egg and chickpea flour.

 Add the parsley, onion/chili mixture and mix well. Salt as needed. Use two spoons dipped in a little oil to form patties.  Place on a well sprayed baking sheet.

Bake in a 400 degree oven for 10-12 minutes per side. Add sesame seeds if you desire. Serve in a pita or alone with yogurt mint sauce.










 
Yogurt Mint sauce:
1 cup plain yogurt
1 small handful of minted chopped
1/2 tsp of ground cumin
juice of half a lime or full lime if it's not too juicy
salt to taste
Stir well and allow to chill for a few minutes before serving.

Beet Curry - Sri Lankan Style

Do you like beets?  I love beets. Well, I was introduced to beets in a curry so with all the amazing spices and flavors, it's an outstanding way to eat them. Now you can create these beets the simple way by buying a can of beets like I did here. This is actually my mother's recipe and that's how she made the dish so I don't question her method.  All I care about is the final dish and flavor so if she says uses can beets... I use can beets.  I'm a sucker for an easy dish anyway.... the the less I have to actually prep a dish all the better for me (no beet stained hands and cutting board here).  If you don't like beets, but love curry try this dish. You may never look at those "controversial" beets the same again.

Ingredients:
1 (15oz) can beets (reserve 1/2 cup of beet juice)
12-15 curry leaves
1 medium onion chopped
1-2 green chilies sliced
1 cinnamon stick
1/2 tsp of fennugreek seeds
1/2 tsp of mustard seeds
1/4 tsp of turmeric
red chili powder to taste
1/2 tsp curry powder
1/2 tsp sugar
1/2 tsp of vinegar
salt to taste
1/2 cup of coconut milk (or cow's milk if you prefer)

 Directions:
 Heat 1 tsp of canola oil in a pan on medium high heat. When oil is hot, add the curry leaves, cinnamon stick, mustard seeds and fennugreek seeds for 30 seconds. Then add the onions and green chilies.  Saute for 2-3 minutes.

Then add the curry powder, turmeric, chili powder, sugar, salt and canned beets.  Fry for a few seconds.

 Add the beet canning liquid, vinegar and coconut milk. Bring curry to a simmer and cook for 2-3 minutes. Taste for seasoning and your dish is done. Serve with rice and mild curries like lentils. Enjoy.

April Fool's Day Pineapple Fool

This recipe is simply awful.. terrible... tasteless.... okay not really... Happy April Fool's Day Everyone!!   This easy fool comes together in a flash and it's simply delicious.   I love this kind of light dessert to end any meal especially now that the warm weather is here. So don't be a fool.. try this fool.  :)  I hope you enjoy your crazy April Fool's Day and I hope you don't get too many jokes played on you today. :)

Ingredients:
1 (8oz) brick of cream cheese
1 (20oz) can of crushed pineapple with juice
2 tubs of whip topping
1/4 cup of sugar (or to taste)

Directions:
Allow cream cheese to sit on the counter and come to room temperature. Use an electric mixer and whip the cream cheese and sugar until fluffy. Then add the juice of canned pineapple and whip until smooth. Then fold the crushed pineapple followed by the whip topping. Serve chilled. Enjoy.
