Decorated Pumpkin Cake

Halloween parties and celebrations are upon us.  I thought I would bring this very festive and fun cake that I made last Halloween to the spotlight today.  It was very easy to make and decorate.  Hey, if I can do it... anyone can. :)

Ingredients:
2 boxes of any flavor cake mix.  I used classic yellow.
(See notes for Paula Deen's tips to enhance box cake mix)
2-3 tubs of frosting or your favorite white frosting
sprinkles (optional)
Yellow, Red and Green food coloring (see note)
1 ice cream cone

Notes on Box Cake Mix:  Paula Deen advised that you can turn a regular box cake mix to a richer cake mix by doing the following:   
1. Add an extra egg to to the box cake mix (for example if the box calls for 3 eggs, use 4)  
2. Add butter in place of the vegetable oil  that is called for on the cake box.
3.  Add milk in place of the water that is called for on the cake box.

Notes on Frosting:  You can get some help from the store and buy orange and green cake frosting.  That's actually what I did. 

Notes on the baking pan:  You will need a bundt cake pan for this cake so you can get the right shape.  You will either use two bundts pans to bake the cakes or have to bake one cake at a time using the same bundt pan.  That's what I did.


Directions:
Bake the two cakes per the box baking instructions until done.  Allow cakes to cool completely on two separate plates.

Then frost the dome part of one bundt well.  Next, take your cake plate (the plate that will hold your final pumpkin cake) and invert it over the frosted cake. Then flip the frosted cake over so the frosted side is now the bottom half of the pumpkin and the flat side of the bundt is facing up.

Now frost the flat side of the bundt cake well. This will become the center layer of frosting between the two bundt cakes.  Next, place the second bundt cake on top of the bottom cake by placing the flat sides together.  The dome of the 2nd bundt should be the top of the pumpkin now.

  Frost the top bundt cake as well. Use the back of a spoon and give it some texture up and down the cake to make the ridges of the pumpkin.






Next take a flat bottom ice cream cone and frost it will with the green frosting.  Place the frosted ice cream cone in the bundt cake hole so it looks like the stem of the pumpkin. 








Voila you have just created yourself a pumpkin shaped cake.  Now you can decorate with sprinkles and novelty plastic spiders to give it a real fun finish.  Slice and enjoy.  Serves a party.

Curry and Comfort's Weekly Sunday Summary 10/15/12 thru 10/21/12

 Hello Everyone,
I had an extra special week with my family this past week.  My daughter celebrated her birthday, we had a field trip to a pumpkin farm and loads of celebration dinners.  I also made my first pumpkin recipe of the month (finally)!  So now the pressure is off (a little).  I still promised a pumpkin-fest month full of pumpkin loving recipes so I have to get my pumpkin recipes in order to wow you this week (I hope).
 
 I also created two fun microwave recipes in a mug this week.  I think I will be experimenting more with my microwave... you know how I love to experiment.  Heck, the fact that I had a homemade chocolate cake in less than 3 minutes in the microwave makes me think.... this can be life changing and bit dangerous too. 

National Pasta Day was also celebrated this past week and I was thrilled to be asked by Classico Pasta Sauce to contribute a recipe.  I think I have fallen in love with using anchovies to flavor pasta sauces and vegetables.  I never knew how deep and flavorful anchovies could be once they are melted down in some olive oil.  So keep a look out for more recipes in the future with anchovies too. 

I ended the week with a really comforting and protein packed soup when I cooked up my Southwestern Three Bean Soup.  I see more comforting soups in my future since I finally see the weather starting to cool down and the cooler side of fall settling in before winter. The leaves are magnificently changing color around my area and I wish I carried my camera around everywhere to capture the beauty I see around me.  All I can do is to try to soak in and cherish every majestic hue of color that Mother Nature has painted.  I would not give up the beauty of fall for anything (even if winter is looming around the corner).

Southwestern Three Bean Soup with Chicken

We had a cool rainy day today so I felt like eating a comforting bowl of soup.  This soup is creamy and a bit cheesy with loads of healthy proteins from the beans and chicken.  Southwestern style bean soups are always a hit with my family so I know the pot will be finished off today when they ask for the leftovers.


Ingredients:
1lb ground chicken
1 medium onion chopped small
2 stalks celery chopped small
2-3 cloves of  garlic grated
2-3 tsp ground cumin
2 Tbs flour
Seasoning salt to taste
Black pepper to taste
Red chili flakes to taste
1 tsp onion powder (optional)
2-3 tsp American Chili Powder (for chili con carne)
1 1/2 cups prepared salsa
4 cups low sodium chicken stock
1 (10oz) can condense Mushroom or Cream of Chicken Soup
1 cup milk
1 cup cheddar cheese
1 cup frozen corn (optional)
1 (15oz) can of light kidney beans drained and rinsed well*
1 (15oz) can of black beans drained and rinsed well*
1 (15oz) can of pinto beans drained and rinsed well*

Garnish with: sour cream and shredded cheese

Note: ** You can use any of your favorite beans here, these beans are just what I used.

Directions:
Heat 1 Tbs of canola oil in a large soup pot and brown your chicken.  Then add chopped onion and celery.  Next add seasoning salt, pepper, cumin, garlic, red chili flakes, flour and saute for a few minutes.

Then add salsa, condensed soup and chili powder.  Add canned beans and chicken broth.  Bring to a simmer and cook for 20 minutes on medium heat.

Finish off with corn and shredded cheese.  Stir until well mixed and cheese melts then taste for seasoning.  Garnish with sour cream and more shredded cheese.  Enjoy.

2 Minute Chocolate Mug Cake with Caramel Surprise

I have seen microwave chocolate cakes around for a while.  I always thought they were so cool, but I never tried to make one myself. Then one day I was watching Rachael Ray when Sunny Anderson from the Food Network came on and did 5 mug style desserts in the microwave in 10 minutes.  I had all the ingredients for this Chocolate Cake in my house so I did it that day.  The cake was pretty good and really moist.  I only had Nesquik Chocolate Syrup in the house so that's what I used and it was not my favorite chocolate flavor for the cake.  The caramel would have been cool, but it didn't melt in the 40 extra seconds I put it in for... I blame my microwave.  But all it in all the concept and results were pretty darn good!   This recipe has sparked a new passion for me.  I am going to start playing around more with this concept of mug cakes and see what I can come up with too. :)


Ingredients:
Cooking spray
1 egg
4 tablespoons chocolate syrup
2 teaspoons flour
1/8 teaspoon cinnamon
A pinch of salt
2 caramel candies
1 1/2 tablespoons sugar

My addition:  caramel Syrup
Garnishments: raspberries

Directions:
Spray both microwave safe mugs with cooking spray.  Then beat egg and mix all ingredients (except for the caramel candies) to form a batter. Pour batter into sprayed mugs. Cook on high for 2 minutes in microwave.  Take mugs out and poke a caramel candy in the center of each mug cake and put into the microwave for an additional 40 seconds.  I poured some more caramel sauce on my cake since the candies did not melt well and garnished with raspberries. Eat it straight out of the mug or flip over onto a plate and serve.  Enjoy.

Coconut Butterscotch Cake Cookies

 I have not posted a cookie or my "cake" cookies in a while.  I made these lovely little cookies when I got inspired yesterday after tasting some free samples of bakery cookies at my grocery store.  My kids loved the cookies and asked me to make my version at home.  I made these in minutes with a few basic ingredients and they came out just like the cookies my kids enjoyed at the store.

 Ingredients:
1 box of yellow cake mix
1 1/2 cups of butterscotch chips
1 cup of baking coconut (sweetened)
2 eggs
1/2 cup of canola oil

Directions:
 Mix the cake mix with the eggs and canola oil.  Then add your chips and coconut. Mix all ingredients into the cookie batter well.

Make golf ball size balls from the cookie dough and place them on a sprayed cookie sheet.  Place them in a 350 degree oven for 17-20 minutes.  When the edges start to turn brown they are ready.  Allow the baked cookies to remain on the cookie tray to cool completely and finish setting.  Store cooled cookies in an air tight container.

Makes 15-18 cookies

Spinach and Ricotta Stuff Manicotti with Chicken and Eggplant Ragu

 Happy National Pasta Day everyone!!  My family loves pasta so when the folks at CLASSICO asked me to pay tribute to this wonderful food, I jumped at the chance. I knew I had to come up with a fun dish to celebrate the day and that's what I think this Spinach and Ricotta Stuff Manicotti with Chicken and Eggplant Ragu does in spades.  I have never worked with manicotti style pasta before so when I saw it at the store I knew that it was my next challenge.  I decided to really bump up the health factor of this dish by not only using almost a pound of spinach in it, but also more than a pound of eggplant in the ragu sauce.  I also opted to use lean ground chicken instead of beef to lighten the sauce up even more.  Then I used a jar of  CLASSICO Creamy Spinach and Parmesan to bring the entire dish together. My family loved this comforting and flavorful pasta dish.  I also had a very comforting feeling since I knew it was full of healthy ingredients.

 Ingredients:
 Sauce:
1 (1-2lb) American variety eggplant diced very fine
1 (2oz) can of anchovy fillets in olive oil
2 Tbs olive oil
1 medium onion diced
2-3 cloves of garlic grated
1lb of lean ground meat (I used ground chicken)
1 jar  CLASSICO pasta sauce
1 tsp dried basil
1 tsp dried oregano
red chili flakes to taste
salt and black pepper to taste
1tsp brown sugar
2 cups shredded mozzarella cheese


Spinach and Ricotta filling:

14-16oz frozen spinach
2 cups of Ricotta cheese(low fat cottage cheese can be substituted)
1/3 cup Parmesan cheese
1/2 tsp granulated garlic
salt and pepper (to taste)
1 egg
1/8 of a teaspoon freshly grated Nutmeg
salt and black pepper to taste


Directions:
For the Spinach Ricotta Filling:
 In a frying pan heat up the spinach to defrost.  Once heated add granulated garlic, salt, pepper and nutmeg.  Turn stove off and allow mixture to cool.  Then add ricotta cheese, Parmesan cheese and egg. Mix until well combined.

For the Sauce:

Heat 2 Tbs of olive oil on medium-high heat in large pan and add the anchovy fillets plus the oil from the can.  Put a lid on it so the anchovies don't splatter everywhere.  Once the anchovies melt (this happens pretty quickly) add the chopped eggplant.

Cook eggplant for 7-8 minutes until it becomes tender and almost half it's volume.  Turn stove off and tilt the pan so the oil drains away from the eggplant.  Remove eggplant from pan until later. Heat stove again and use the drained oil to fry the onion and grated garlic for 1 minute.

 Then add the lean ground meat and brown.  Add the dried oregano, basil, red chili flakes, sugar, black pepper some salt (remember the anchovies will add salt to the dish as well).  Once the meat is browned and seasoned well, add the cooked eggplant back to the pan.

Next add the jar of  CLASSICO.   Turn stove to medium and allow sauce to cook for 15-20 minutes.  Taste for seasoning and turn stove off.  Cook manicotti pasta per package instructions (shy by one minute) in well salted water.

Assembly:
In an oven safe baking dish, fill 1/2 of the sauce on the bottom of pan.  Then fill the cooked manicotti with the spinach and ricotta mixture and place over the sauce.  Pour the remaining sauce and top with 2 cups of mozzarella cheese.  Bake in a 350 degree oven for 30 minutes until brown and bubbly on top and serve hot.  Enjoy.

2 Minute Microwave Mug Omelet

 When you are a busy mother of two young kids, getting out the door in the morning with a good nutritious breakfast in your belly can be tough.  I was ecstatic about this easy and delicious 2 Minute Microwave Mug Omelet.  No frying pan necessary.  I saw this idea in a magazine advertising eggs and the concept was so intriguing. I knew I had to give it a try with my own recipe.  When I pulled the mug out of the microwave I seriously did a happy dance.  This omelet was light, fluffy and so very easy.  I only had one small bowl and my coffee mug to wash after it was done so that was good too.  You can customize this omelet with any add-ins.  I suggest if you want to do this for several days in a row, have all your add-in ingredients prepped and ready to go in a partitioned Tupperware or Ziploc bags and just toss into the omelet as you wish.  Everyone has two minutes to spare for a healthy breakfast and this one is perfect.

Ingredients for One Mug Omelet:
1 large egg
2 Tbs milk
salt and black pepper to taste
cooking spray

Add-ins:
raw onions diced
green peppers ( I used defrosted frozen diced green bell peppers)
finely diced jalapeno
shredded cheese (cheddar, etc..)
crumbled cooked sausage
diced cooked ham
cooked crumbled bacon



Directions:
In a bowl beat one egg, a splash of milk, salt and pepper well.  Then add the add-ins of your choice and mix well.  Spray a microwave safe mug with cooking spray then pour in the omelet mixture.  Top with some extra shredded cheese and put in the microwave for 2-3 minutes (depending on your microwave wattage).  I put it in for 21/2 minutes.  Serve hot. Enjoy.
