I have a confession to make.... I like shopping for candy the day after a big holiday because they are on clearance. Okay... there... I said it. After any holiday you will find Halloween Candy, Christmas Chocolates, Valentine's treats and Easter confections discounted from 50% to 75% off. That's when I put my spending hat on and I buy several bags to make desserts. So these lovely peanut butter cups you see pictured above had pretty little pastel foiled wrappers from Easter, but the chocolate inside is your standard Reese Peanut Butter Cup. So why would I pay $4.50 a bag when I can get them for $1.99? I love adding chocolate to my banana bread so I added peanut butter cups instead. With the exception of the chocolates, this is a pretty well rounded banana bread full of wholesome ingredients. I would definitely say it's a great way to eat my chocolate.
Ingredients:
1 cup whole wheat flour
3/4 cup old fashioned oats
3/4 cup all purpose flour
3-4 bananas mashed
1/3 cup honey
1/4 sugar or splenda
1/4 cup peanut butter
1 tsp baking soda
1 tsp baking powder
1/3 cup buttermilk
sprinkle salt (see note)
2 eggs
1/4 canola oil or applesauce
1 tsp vanilla
1 tsp cinnamon powder
12-20 coarsely chopped peanut butter cups (substitute chocolate chips)
powdered sugar or melted chocolate as a garnish
Note: You may not need to add salt if your peanut butter and peanut butter cups are salty enough.
Directions:
Mash the bananas well. Add eggs, buttermilk, oil, vanilla, honey, sugar, peanut butter and cinnamon together. Mix well. These are your wet ingredients.
In a separate bowl measure the dry ingredients: flours, oats, baking soda together. Add the dry ingredients to the wet ingredients and stir gently with a spoon until batter is mixed.
Finally add the chopped peanut butter cups and mix in gently. Spray or oil a baking pan well. Pour batter into baking pan and put into a 350 degree oven and bake for 40-45 minutes or until done.
