When you are having guests over for dinner, the last thing you want is to make a complicated appetizer that is heavy and fills your guests up. So here is an easy appetizer that looks beautiful on any table and is perfect to just wet the appetite and not over do it. These antipasto kebabs were also so fun to eat. I even left some extra ingredients out so the kids could customize their own favorite kebab. The kids loved the pepperoni, tomatoes and cheese. I loved it all... especially the olives. Customizing your kebabs are best for a small gathering. If you are having a very large gathering, it would be better to prepare all the kebabs in advance so it's neater and easier on your guest. I love looking at this plate of antipasto... it's so festive and inviting.
Ingredients:
Grape tomatoes
olives of choice ( I used black and green Spanish olives)
pepperoni slices
fresh mozzarella cut into cubes
Vinaigrette:
2 Tbs olive oil
salt to taste
1/2 tsp dried oregano
black pepper to taste
red chili flakes to taste
1/2 tsp up to 1 tsp balsamic vinegar
Directions:
Make vinaigrette. Cut tomatoes and cheese. Toss in vinaigrette. Create kebabs with the ingredients above and the marinated tomatoes and cheese. Serve. Enjoy.
