I bought a jar of orange marmalade for a recipe a while back. After using half the jar, the rest of the marmalade sat in the fridge and was forgotten about for a couple of weeks. So I came up with these reduced fat (no oil used) banana, nut and orange marmalade muffins to use up the end of the bottle. I used the marmalade in both the muffin and the glaze... that really gave these a nice citrus flavor. I shared some with my mother and she asked me to make another batch of these muffins for her. I guess I'll be buying another jar of orange marmalade and I'll be back to having half a jar of marmalade in my fridge again.
Ingredients:
Dry Muffin Batter Ingredients:
1 and 1/2 cups All Purpose Flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
Wet Muffin Batter Ingredients:
3 ripe bananas mashed
1/2 cup white sugar
1 egg
1 tsp vanilla
1/3 cup apple sauce
1/3 cup orange marmalade
1/4 cup chopped pecans or walnuts
Marmalade Glaze:
1/3 cup marmalade
1 cup powdered sugar
1 Tbs orange juice or water to mix
Directions:
Sift dry ingredients together. Mash banana well and then mix wet ingredients until well combined. Stir in dry ingredients gently (careful not to over mixing).
Place in well greased or paper lined muffin pan. Bake at 375 degrees for 18-22 minutes (or until done). All ow muffins to cool down a little before applying glaze. Enjoy. Yields 12 large muffins
Tip: I used an ice cream scoop to easily fill the muffin pan and get the same portion in each hole.
