My sister and her family will be enjoying a family trip to Italy this summer. That got me craving and thinking of pizza today. I only had store bought naan, some fresh mozzarella cheese in my house and some basil and tomatoes growing in my garden. So, a margherita style pizza was the perfect solution for my pizza craving. .
This pizza is so simple, but full of flavor and beautiful colors. I made it for a quick and easy lunch and everyone loved it. I decided to not to put a sauce on this pizza crust, instead I put a garlic bread twist on it. To punch up the flavor some more, I tossed the tomatoes in vinaigrette and drizzled the same vinaigrette on the pizza before serving. I may not be going to Italy this summer... but this pizza was as my passport to Italy and it reminds me of the Italian flag too.
Ingredients:
Store-bought Naan Bread (as needed)
Fresh mozzarella cheese cut into slices (as needed)
Fresh basil leaves thinly shredded (as needed)
Sliced grape or cherry tomatoes (tossed with vinaigrette below)
2 Tbs butter melted with 1/4 tsp granulated garlic
Vinaigrette:
2 Tbs olive oil
salt to taste
1/2 tsp dried oregano
black pepper to taste
red chili flakes to taste
1/2 tsp up to 1 tsp balsamic vinegar
Directions:
Slice tomatoes and toss with prepared vinaigrette above. Prepare the butter/garlic spread and brush generously on naan bread. Layer naan with sliced mozzarella cheese then top with marinated tomatoes and bake until cheese melts and bread is toasted. Remove from oven and top with some shredded basil leaves and drizzle with some remaining vinaigrette.
