My son is running the menu planning this week since it's his birthday week. What can I say, if I can't spoil him this week... when can I? So you will see a lot of sweet treats and kid friendly food in the next few days. Today we start with Barbeque Sloppy Joe Sandwiches. He was doing cartwheels when I served him his plate for dinner. I added his favorite french fries and even a little salad (I've got to put something green on the plate). The dinner was joyful because there was no whining or picking out bits and bobs of ingredients he didn't like. He even was okay that I added onions and green peppers(whew!). The dinner comes together in minutes and with the homemade barbeque sauce is easily tweaked it to your taste. Now get ready for a sugar rush... because he has ordered up a lot of sweet treats for me to make for him in the next few days. Thank goodness it's summer vacation so he is just going to bounce off the walls at home and not at school.
Ingredients:
1lb of ground chicken
1 medium onion finely chopped
1 green bell pepper finely chopped
2 cloves of garlic grated
Barbeque Sauce:
1 cups of crushed canned tomatoes
1/4 cup of brown sugar
1/4 cup of cider vinegar
1/2 Tbs of Dijon mustard
1/2 tsp dried oregano
1 Tbs of Worcestershire sauce
salt and black pepper to taste
red chili powder (or red chilies flakes) to taste
1 Tbs of lemon juice (juice of half a lemon)
Directions:
Brown the ground chicken with a little canola oil on high heat. Then add the onions, bell peppers and a salt/black pepper. Then add the ingredients of the barbeque sauce and simmer on high heat for 15-20 minutes
Adjust the sauce to taste. The liquid of the sauce will reduce and thicken. Once the sauce is reduced and the meat starts to sizzle in pan, turn it off. Serve on tasted buns. Enjoy.
