I mentioned yesterday that my son has taken over my menu planning this week since it's his birthday week. He asked for special cupcakes so I came up with these fun Sunflower Cupcakes. They are made with a Reese's Peanut Butter Cup and some beautiful yellow frosting for the petals. Now I'm not a big time baker or cake decorator... but I was thrilled with these cute cupcakes. Sunflowers are my favorite flower and these Sunflower Cupcakes are for my favorite little boy in the world!
Ingredients:
1 box yellow cake mix
3 eggs
1 cup milk
1/3 cup sour cream
1/3 cup oil
Reese's Peanut Butter Cups
Yellow colored frosting (homemade or store bought)
Directions:
Prepare cake box mix with all ingredients listed above except for Reese's cups and frosting. Then fill the cupcake pan with liners and the liners with batter 3/4 way full. Place a unwrapped Reeses's (the big flat kind like a disk) in the middle of each unbaked cupcake. Bake for 19-23 minutes at 350 degrees. Allow cupcakes to cool completely before frosting with yellow frosting.
Tip: I used a piping bag to frosting around the cupcake then took a spoon to lift up the petals.
