I was thrilled when Dailybuzz gave me the opportunity to write a recipe for this fantastic product that our family uses regularly. I always buy the bottle variety and was excited to experiment with the seasoning mix. I had so many ideas in my head on what to create and I finally decided on my Avocado Ranch Sauce with Cajun Fish Tacos.
My kids were able to help me make this meal that came together very quickly. The best part was everyone got to custom make their own tacos with fresh cabbage, onions, tomatoes and creamy sauce. My daughter even created a mini salad on her plate with the toppings and the Avocado Ranch Sauce because she loved the ranch flavor in the sauce. When you have Hidden Valley Ranch Dressing around, you don't have any whining at the table about eating veggies, you just have happy smiles.

Ingredients For Avocado Ranch Sauce:
2 medium size ripe avocados
1 cup milk or buttermilk
1 packet Hidden Valley Seasoning Mix
1 cup Greek Yogurt
1/4 cup lite Mayonnaise
Salt and Black Pepper if desired (I did not use any)
Directions: Place all ingredients in food processor and blend until smooth. Chill until use.
Ingredients for Cajun Fish Tacos:
1-2lbs fillets of mild white fish (ie. Cod, Halibut)
Cajun Seasoning (See recipe below)
Salt and Black Pepper as needed
Oil for Sauteing
Garnishes/Toppings:
Shredded Cabbage or Lettuce
Diced Tomatoes
Sliced or diced onions
Emeril's Creole Seasoning:
2 1/2 Tbs paprika 2Tbs salt
2 Tbs garlic powder 1 Tbs black pepper
1 Tbs onion powder 1 Tbs cayenne pepper
1 Tbs dried oregano 1 Tbs dried Thyme
Directions:
Coat both sides of fish fillets with Cajun Spice Mix. Heat a skillet with 2-3 Tbs of canola oil. Cook until fish has a charred appearance, about 3-4 minutes (depending on thickness).
Serve in grilled or heated tortillas with garnishes and Avocado Ranch Dressing. Enjoy.
