Here is another crazy "out of the box" egg roll that I made recently. My son loved these so much he asked for me to buy the egg roll wrappers in bulk and make them again. I just may do that because I think these fun egg rolls would make a fabulous dish for the Super Bowl.
Ingredients:
1lb of favorite lean ground meat (beef, chicken, pork, turkey)
1-2 cloves garlic grated
1/2 green bell pepper (or jalapeno) finely diced
1/2 medium yellow onion finely diced
1 grated carrot
1 celery stalk finely diced
red chili flakes to taste
1/2 tsp of dried oregano
black pepper to taste
seasoning salt or salt
4-5 slices of American Sliced Cheese or Cheddar Cheese
Slices of crispy bacon (see my tip how to make bacon below)
Sauce
1-2 Tbs of soy sauce (add to taste for salt flavor in dish)
1/4 cup ketchup
1 Tbs Worcestershire sauce
2 tsp of yellow mustard
Directions:
Brown ground meat of choice in a little oil. Then add carrot, pepper, onion and celery. Next add ground seasonings and saute. Finally add sauce and cook for 5 minutes. Taste for seasoning and adjust as needed. . Cool filling before proceeding to make egg rolls.
Add about 2 Tbs of filling in the center of egg roll. Top with half a crispy strip of bacon. Fold bottom corner over and sides in.
Roll tightly and seal the edge with water. Have all egg rolls done before frying. Do not lay on top of each other so they don't stick together.
Fry each egg roll until golden brown. You want your oil at 350 degrees. Drain on paper towels. Serve with a mustard and ketchup if desired. Enjoy.
To do the bacon:
The easiest way to make bacon is to bake it in the oven. You will get perfectly crispy bacon and you don't have to do anything but let it bake. Preheat your oven to 400 degrees. You will need a baking tray and some cooling racks placed on top of it or you can use your broiler pan that is slotted with a drip pan. Lay your bacon across the cooling racks. Place them in the oven for 15 minutes or until the bacon is fully cooked. The bacon will be crispy, perfectly straight and all the oil will have dripped to the lower tray. I love this method.
