Chickpea and Feta Salad and Good Cook Giveaway

 The weather is hot and any dish a I can make without turning the stove on is a plus.  This salad comes together in 5 minutes, it's healthy and my kids loved it.

These keepers are perfect to put those leftovers in and save until you use them again.  I used to put my onions and tomatoes in a sandwich baggie or plastic wrap, but they can get mushed and dented and not so good looking by the time I go to eat them again. Ingredients:
1 (15oz) can of chickpeas (rinsed and drained well)
1 tomato diced
1/2 English cucumber (or regular cucumber seeded) diced
1/2 red onion finely diced
1/2 cup Feta cheese
1/2 Tbs minced fresh mint
1 Tbs minced fresh parsley

Dressing:
1/2 lemon juiced
1 Tbs canola oil
salt and black pepper to taste
1 tsp rice wine vinegar
1/4 tsp cumin powder

Directions:
Place all prepped ingredients in bowl.  Prepare dressing.  Mix all ingredients together with dressing and chill for 1 hour. Enjoy.
