I love a quick dessert when you just have a craving for something sweet. This apple pie in a mug is fast, easy and full of that apple pie flavor you love. You can serve it with vanilla ice cream or whipped cream ... or both! I topped it with some crumbled nilla wafer cookies to give some crunch and the feeling of a "crust". You can actually forgo the cookies all together and have a crust-less pie dessert. My daughter squealed with delight when I pulled this out of the microwave and she tasted it. You can even make this low carb by swapping the powdered sugar for some agave syrup. Either way it's a fun and easy dessert and "Shhhhh" no one needs to know you had apple pie. It's between you, the mug and the microwave. :)
Ingredients:
1 cup chopped (skinned and cored) apple
1/2 tsp all purpose flour
1 tsp butter
1/4 tsp cinnamon powder
1 tsp powdered sugar (or more to taste)
pinch of grated fresh nutmeg
tiny sprinkle of salt
few drops of lemon juice
3-4 nilla wafer cookies coarsely crumbled
scoop of vanilla ice cream or whipped cream for garnish
Directions:
Skin, core and chop apple. Add all ingredients (except for cookies, or garnishes: whipped cream/ice cream) to microwave safe mug. Stir well.
Microwave for 2 minutes on high and taste. If desired microwave for another 30 seconds. Top with crumbled cookies and whipped cream and/or ice cream. Enjoy.
