I have been dealing with two sick children lately. Since fluids are good for colds and viruses, I stopped by the grocery store for juice after taking the kids to the doctor. My favorite clearance rack had ripe kiwis (12 for $1). Of course I bought them since they are so full of vitamins. An energy/vitamin packed smooth was what this "Dr. Mom" had in mind. Since the kiwis were a bit ripe they were very sweet and perfect for this Kiwi Colada Smoothie. I used Coconut Milk since kiwis and/or pineapple won't mix well with regular milk. I found out the hard way that certain enzymes kiwis, pineapple and papaya makes milk taste bitter. So the coconut milk was a perfect choice. I really loved this bright and tangy smoothie and so did my little patients.
Ingredients:
4-5 ripe kiwis
1 1/2 cup coconut milk **
1 cup pineapple juice
1 cup pineapple chunks (frozen preferable)
sugar or agave if needed for sweetness
ice if needed**
Note: I used Coconut Milk available near the regular milk in a carton. I did not used the canned variety.
Directions:
Put all ingredients into blender and blend until smooth. Serve chilled. Enjoy.
Note: To easily scoop kiwis, cut in half and use a spoon to scoop around the skin.
