I think I do things a little backwards sometimes. Usually people go to the grocery store looking for the ingredients they need for a recipe. I go to the grocery store to see what I can buy to make a recipe with instead. My local store had pickling cucumbers bagged in 2 1/2 pound bags for $1. How could I just pass them up at that deal? So I brought them home and then figured out I better make something with them and the winner was... Spicy Garlicky Bread and Butter Pickles. These pickles go great on a burger, cut up into a tuna salad, or straight out of the jar.
Ingredients:
2-3lbs (6-7 cups sliced) pickling cucumbers
1/4 cup sea salt
enough water and ice to fill bowl
1 large red onion sliced thick
Pickling liquid:
1 cup apple cider vinegar
1 cup white sugar
1 tsp red chili flakes
1 tsp black mustard seeds
1 tsp celery seeds
1/2 turmeric powder
1 heaping Tbs grated garlic
Directions:
Slice cucumbers to desired thickness. Place in bowl with salt, ice and enough water to submerge the cucumbers for 2 hours. Drain cucumbers and prepare the pickling liquid with all the above ingredients. Bring to a boil for 2-3 minutes.
Slice red onions and place with cucumbers. Then pour the hot pickling liquid over the onions and cucumbers. Mix well.
Allow pickles to cool before placing in jars and putting them in the refrigerator. Marinate pickles for 24 hours before using. Enjoy.
